Parsnip and Apple Soup

Ingredients

  • 160g parsnip
  • ½ tbsp olive oil
  • 90g cooking apple
  • 1 vegetable stock cube
  • 1 tsp fresh rosemary
  • ½ onion
  • 1 garlic clove
  • 1 tsp dried thyme
  • ¾ tsp ground cinnamon

Method

  1. Heat oil, add onion and garlic, fry till soft
  2. Add apple and parsnip and stir. add stock, thyme and cinnamon
  3. Cook till parsnip is soft. blend till roughly chopped/almost smooth
  4. Serve with a sprig of fresh rosemary and chunky bread. yum :)
