Parsnip and Apple Soup

Ingredients
- 160g parsnip
- ½ tbsp olive oil
- 90g cooking apple
- 1 vegetable stock cube
- 1 tsp fresh rosemary
- ½ onion
- 1 garlic clove
- 1 tsp dried thyme
- ¾ tsp ground cinnamon
Method
- Heat oil, add onion and garlic, fry till soft
- Add apple and parsnip and stir. add stock, thyme and cinnamon
- Cook till parsnip is soft. blend till roughly chopped/almost smooth
- Serve with a sprig of fresh rosemary and chunky bread. yum :)
