  • 2 little gem lettuce
  • 50g cucumber
  • 1 spring onion
  • 1 celery stalk
  • 1 can tuna chunks
  • 5 black olives, pitted
  • 2 tsp olive oil
  • 2 tsp white wine vinegar
  • ½ tsp dijon mustard

  1. Make the salad with the lettuce, cucumber, spring onion and celery. Flake the tuna on top and sprinkle on the sliced olives.
  2. Mix the olive oil, vinegar and mustard with a small pinch each of salt and pepper and drizzle over the salad.
