Low Fat Savoury Pancake Recipes

These savoury pancake recipes are a great alternative if you're looking for a new evening meal, and a tasty way to squeeze in a few more veggies.
There are some lovely flavours in these three recipes, salmon, Tex-Mex, and avocado. Ideal if you fancy something tasty, but healthy and low calorie, for dinner.
All of them go well with a virtuous green leaf salad.
Just make your pancakes, make the filling recipe, spoon the filling onto the pancake, fold and serve, Gorgeous!
Salmon & Cream Cheese Pancake Filling
Makes sufficient for 8 pancakes (serves 4)

Ingredients
- 200g low fat soft cream cheese
- 3 tbsp snipped chives
- ½ onion, grated
- 6 oz smoked salmon
Method
- Make the pancakes as directed. Keep Warm
- Chop the salmon and combine with the other ingredients
- Add a spoonful to each pancake and serve.
Tex-Mex Pancake Filling

Ingredients
- 1 medium onion
- 1 pepper (red, yellow or orange)
- 1 tbsp olive oil
- 200g cooked, skinless, boneless chicken breast
- 415g can refried beans
- 1 tbsp hot chilli sauce (Tabasco® or alternative) cut this to 1 tsp if you prefer it mild
Method
- Roughly chop the onion, pepper and chicken.
- Fry the onion and pepper in the olive oil until they start to soften.
- Add the chicken, refried beans, and chilli sauce to the pan and stir together until all of the ingredients are warmed through.
- Serve with the pancakes.
Avocado and Tomato Salsa Pancake Filling
Makes sufficient for 8 pancakes (serves 4)

Ingredients
- 4 medium avocado
- 8 medium tomatoes
- 2 tsp dried oregano
- 1 tbsp rice vinegar
- tsp salt
Method
- Chop the avocado and tomatoes into small chunks,
- Combine all of the ingredients together in a bowl and mix well.
- Serve in the pancakes.
