Cucumber and Mint Raita

A great little side dish that works well with virtually all Indian Dishes, balancing the heat with something a little cooler. Also makes a good, low fat, party dip.

Ingredients

  • 360g cucumber
  • t tsp dried mint
  • 150g natural low fat yogurt

Method

  1. Finely chop the cucumber and mint, then mix together. Leave to stand for 10 minutes.
  2. Stir in the yoghurt just before serving.
