Thai Papaya Salad

Ingredients
- 1 unripe papaya
- 3 garlic cloves
- 70g green beans
- 1 chilli pepper
- 150g cherry tomatoes
- 1 tbsp palm sugar
- 1 tbsp thai fish sauce
- 1 lime
Method
- Chop the papaya into matchsticks
- Peel the garlic
- Prepare and chop the chilli
- In your pestle and mortar, grind up the garlic, chilli and sugar into a paste, add in the green beans and tomatoes and bruise it all up together.
- Chuck in a good slug of fish sauce and the juice of a lime and mix well.
- Pour the whole lot over the papaya matchsticks, mix with salad spoons and serve immediately.
