Ingredients

  • 1 unripe papaya
  • 3 garlic cloves
  • 70g green beans
  • 1 chilli pepper
  • 150g cherry tomatoes
  • 1 tbsp palm sugar
  • 1 tbsp thai fish sauce
  • 1 lime

Method

  1. Chop the papaya into matchsticks
  2. Peel the garlic
  3. Prepare and chop the chilli
  4. In your pestle and mortar, grind up the garlic, chilli and sugar into a paste, add in the green beans and tomatoes and bruise it all up together.
  5. Chuck in a good slug of fish sauce and the juice of a lime and mix well.
  6. Pour the whole lot over the papaya matchsticks, mix with salad spoons and serve immediately.
