Cous Cous and Cottage Cheese Salad

Ingredients
- 2.5g vegetable bouillon powder
- 1 tsp olive oil
- 40g cucumber
- 80g cottage cheese
- 15g green pepper
- 40g cherry tomatoes
- 20g Romaine lettuce
- 15g red onion
- 50g cous cous
- 1 celery stalk
- 5g fresh coriander
Method
- Boil water in kettle (about half a pint) Put bouillon powder, cous cous, olive oil in 1 pint bowl. Pour in sufficient boiling water to exactly cover the cous cous. Stir briskly, cover and leave for 10 minutes.
- Meanwhile quarter tomatoes, chop cucumber, celery and peppers into small pieces. Shred lettuce; finely chop red onion and coriander. Mix in bowl with cottage cheese.
- After 10 mins fluff the cous cous with a fork and mix well into the other ingredients.
