Vegetable and Pesto Kebabs

"It's a great change to salad and goes with anything. I also like to skewer some monkfish or salmon in between the veg for a proper meal - equally as good under the grill."

Ingredients

  • 1 Med Onion/90g Onions, Raw, Average
  • 1 Onion/50g Onions, Red, Raw, Average
  • 1 Med Pepper/160g Peppers, Capsicum, Yellow, Raw
  • 100g Courgette, Raw, Average
  • 1 Serving/48g Sauce, Pesto, Classic Green, Sacla
  • 1 Serving/5ml Oil, Olive, Average

Method

1. Skewer different types of veg onto kebabs such as pepper, onions, courgette etc.

2. Mix a little pesto with olive oil and spread over the veg then pop on the bbq; basting with the left over sauce.

Comments

Simple and effective. A great way to finish of any chopped veg that missed the skewers. Summery and refreshing.
