Tofu & Vegetable Kebabs with Garlic Baguette
A simple vegetarian kebab with tofu, grilled veggies and some low fat dressing, serve with crusty french garlic bread.

Ingredients
- 125g tofu
- 6 cherry tomatoes
- ½ red onion
- ½ courgette
- 30g low fat dressing
- ½ yellow pepper
- 60g french stick
- ½ garlic clove
Method
- Preheat the grill onto a medium-high heat.
- Prepare the tofu by cutting into bitesize cubes. Drizzle with low fat dressing and leave to marinade for 20minutes to overnight.
- Meanwhile peel the red onion. Chop the courgette, pepper and red onion into chunks a similar size to the tofu.
- Thread the tofu, red onion, cherry tomatoes, courgette and pepper onto the skewers and place under the grill turning frequently. Cook until everything is piping hot and beginning to char.
- Meanwhile cut the french stick into slices and place under the grill for a few minutes just to toast lightly. Rub gently with half a garlic clove to infuse the flavour.
