Swede, Potato & Leek Bake Recipe

Cut out the meat today and try this vegetarian Swede, potato and leek bake! Its low calories, low fat, has over half of your 5 a day and the use of root vegetables means it’s sure to keep you fuller for longer.

Ingredients

  • 800g swede
  • 500g baking potato
  • 300g carrots
  • 350g leeks
  • 400ml made up stock cube
  • 25g low fat spread

Method

Preheat oven to 180°C / Gas Mark 4 / 350°F

  1. Arrange slices of swede, potato, carrot and leek in a oven proof dish.
  2. Pour stock over and dot the spread over the top.
  3. Season and cover with foil.
  4. Bake for 1 hour then remove foil and cook for a further 20-25 mins until veg are tender and a golden colour.
