Cous Cous with Watercress & Tomato Recipe

This couscous makes a great simple lunch, or can be used as a part of a well balanced meal. Serve warm with a drizzle of low fat yoghurt and some garlic bread.

  • 200g dry couscous
  • 1 juiced lemon
  • 1 tsp lemon peel
  • 1 tbsp olive oil
  • 2 large tomatoes
  • 100g red onion
  • 100g watercress


  1. Place the couscous, juice and zest of one lemon and olive oil into a large bowl.
  2. Stir in 300ml of water, season well and leave to soak for 10 minutes or until the water has been absorbed.
  3. Chop and de-seed the tomatoes, finely slice the onion and chop the watercress.
  4. Stir into the couscous and serve.
