Cous Cous with Watercress & Tomato Recipe

This couscous makes a great simple lunch, or can be used as a part of a well balanced meal. Serve warm with a drizzle of low fat yoghurt and some garlic bread.

- 200g dry couscous
- 1 juiced lemon
- 1 tsp lemon peel
- 1 tbsp olive oil
- 2 large tomatoes
- 100g red onion
- 100g watercress
- Place the couscous, juice and zest of one lemon and olive oil into a large bowl.
- Stir in 300ml of water, season well and leave to soak for 10 minutes or until the water has been absorbed.
- Chop and de-seed the tomatoes, finely slice the onion and chop the watercress.
- Stir into the couscous and serve.
