Catherine Wheel Kebabs Recipe


These vegetarian skewers are great fun to make and only take around 30 minutes. Serve as a side for a BBQ or enjoy as part of a meal with a crisp green salad.

  • 160g courgette
  • 120g red onion
  • 1 medium red pepper
  • 1 medium yellow pepper
  • 30ml lemon juice
  • 1 garlic clove
  • 1 tsp dried mixed herbs
  • 15ml olive oil
  • 200g cherry tomatoes
  • 100g button mushrooms


  1. Prepare the peppers and mushrooms and cut into pieces about 1" square.
  2. Peel the onion and cut into quarters.
  3. Slice the courgette into rings about ½" wide.
  4. Whisk together the lemon juice, olive oil, crushed garlic and mixed herbs.
  5. Turn the grill on to a medium heat.
  6. Whisk together the lemon juice, olive oil, crushed garlic and mixed herbs.
  7. Put all the vegetables, tomatoes and mushrooms into a large bowl and stir in the dressing until the vegetables are evenly coated.
  8. Thread the vegetables onto 8 metal skewers and cook under the grill for 10-12 minutes, turning frequently, until the vegetables are lightly charred.
