Baked Pasta Gratin with Sweetcorn Recipe

This baked pasta gratin is high in fibre and high in fruit and veg, it has nearly 4 of your 5 a day! A great comfort food that’s sure to please everyone. Serve with some steamed veg or a simple side salad and enjoy.

- 250g dry penne
- 30ml olive oil
- 120g onion
- 6g garlic
- 700g passata
- 1g dried thyme
- 1g dried oregano
- 0.6g dried bay leaves
- 330g sweetcorn niblets
- 248g 50% fat mozzarella
Preheat oven to 180°C / Gas Mark 4 / 350°F
- Cook pasta in large saucepan of boiling water until just cooked. Drain and set aside.
- For the sauce, heat oil in large saucepan and cook onion and garlic until soft. Add passata and herbs and bring to boil. Cover and simmer for 30 minutes. Remove bay leaf and season to taste.
- Mix pasta and drained sweetcorn with sauce and put into large ovenproof dish. Cover with sliced mozzarella.
- Bake in oven for 20 minutes until heated through and cheese melted.
