Vegetables Mediterranean Style Recipe

This recipe is really quick and easy to make and just offers a little bit of a change to classic veg! Serve up with some well seasoned chicken to add with the vegetables, but don’t forget to add the extra calories!

Ingredients

  • 200g Onions, Red, Raw, Average
  • 100g Courgette, Raw, Average
  • 1 Serving/100g Peppers, Sweet, Raw, Average
  • 100g Tomatoes, Fresh, Raw, Average
  • 2 Tsps/10ml Oil, Olive, Average

Method

Preheat oven to 180C/350F/gas mark 4

Heat the olive oil in a baking tray in the oven.

Prepare and chop the onion, courgette, peppers and tomatoes into chunks.

Add the chunks of vegetables to the tray and toss in the olive oil. Bake in the oven for 40 minutes.
