Roasted Tomato, Chorizo & Basil Sauce Recipe

Roast'em up with a little chorizo sausage, olive oil, fresh chilli and fresh basil you'll have one of the best tomato sauces you've ever tasted! You can use this low calorie sauce to serve with roasted veg, cous cous, pasta or even as a tasty pizza base!

  • 1000g tomatoes
  • 100g chorizo
  • 6.5g red chilli peppers
  • 30ml balsamic vinegar
  • 2 tbsp olive oil
  • 1 tsp Worcestershire sauce
  • 30g fresh basil

Preheat oven to 180°C / Gas Mark 4 / 350°F

  1. Empty your fridge of all the slightly soft and past their best tomatoes you can fine - any kind will do - beef, cherry, salad tomatoes all work equally well.
  2. Roughly chop them and place in a roasting tin with the chopped chorizo sausage, chilli, balsamic vinegar, olive oil and a dash of Worcestershire sauce.
  3. Roast in a pre heated oven for 20 - 30 mins, remove, stir in chopped fresh basil and serve over roasted veg, cous cous, pasta or as a delicious tomato base on pizza.
