Quinoa Salad Recipe

If you’re getting a little bored of a classic salad, why not try this quinoa salad with mango. With almost 3 of your 5 a day, this recipe also includes a zesty salad dressing too!

- 1 mango
- 1 red pepper
- 3.2g fresh mint
- 200g canned sweetcorn
- 1 medium avocado
- 100g tinned chickpeas
- 300g cooked quinoa
- 60ml carrot juice
- 4 tsp olive oil
- 2 tsp wholegrain mustard
- 2 tsp fresh lime juice
- Peel and cube the mango, de-seed and finely chop the red pepper. Wash and finely chop the mint. De-seed the avocado, then peel and slice.
- Place all the salad ingredients into a serving bowl and toss together.
- In a suitable cup or bowl mix together the carrot juice, olive oil, whole grain mustard and fresh lime juice and whisk until smooth.
- Pour over the salad and toss together to distribute the dressing.
