Baby Roast Potatoes with Herbs Recipe
Roast potatoes are a staple in any household, everybody has their own way. Use this recipe for a low calorie, rosemary and thyme flavoured version that the whole family will enjoy.

- 400g new baby potatoes
- 3g garlic
- 2 tsp olive oil
- 1 tsp dried rosemary
- 1g dried thyme

Preheat oven to 200°C / Gas Mark 6 / 400°F
- Wash the potatoes and finely slice the garlic.
- Put the potatoes in a pan and cover with water. Bring to the boil and simmer for 10 minutes.
- Drain the potatoes and put in a large bowl, add the garlic, oil and herbs, plus a pinch of salt and stir gently until the potatoes are coated.
- Put the potatoes in a shallow, non-stick, roasting pan and bake in the oven for 35-45 minutes, until tender.
