Zesty Mango Sorbet

Make your own mango sorbet at home with these 4 simple ingredients. Perfect to cool down on a summers day!

Ingredients
- 250ml water
- 200g caster sugar
- 2 mangoes
- ½ lime, juiced
Method
- Place the water and sugar into a saucepan and bring to the boil, stir occasionally until all the sugar is dissolved, remove from heat and allow to cool.
- Peel and cut the mangoes into chunks, place into a blender and blitz until a smooth puree is formed. Add a splash of the sugar syrup to help blend if necessary.
- Place the pureed mango in a bowl and whisk in the sugar syrup and lime juice. Transfer to a freezer proof container.
- Place in the freezer for 1 hour, then re-blend or mix up thoroughly with a fork to break up ice crystals. Freeze again for another hour, then mix up again. Place back in the freezer now for one more hour before serving.
*If you need to freeze for a long time place in the fridge for half hour before serving to help it soften.
