Vegan Moussaka

Vegan-ize this traditional greek dish by simply swapping out the meat for lentils and creating a dairy free bechamel. It takes a while to prepare but is so worth the wait!

Ingredients
- 2 large potatoes
- 1 onion
- 3 garlic cloves
- ½ small carrot
- 25g walnuts
- 1 large aubergine
- 20 sprays sunflower oil
- 1 tbsp tomato puree
- 2 cans lentils, green or brown
- 2 cans chopped tomatoes
- 1 tsp paprika
- 1 tsp cinnamon
- 30g spread, dairy free
- 60g plain flour
- 300ml almond milk
- 30g cheese alternative
- 1 pinch salt
- 1 pinch black pepper
Method
- Preheat the oven to 200C
- Peel and slice the potatoes into thin discs. Place these into a saucepan and par-boil for around 8 minutes until softened but still firm enough to not fall apart. Drain and put to one side.
- Peel and finely chop the onion, garlic and carrot. Chop the walnuts or place in a food processor to chop finely. Slice the aubergine into long flat strips.
- Spray a large pan with half the spray oil; fry the onion for a few minutes. Add in the garlic and carrot and cook for a few minutes. Add the tomato puree and stir. Add in the lentils and tomatoes. Stir and bring to a boil. Reduce to a simmer for a few minutes then add in the walnuts and spices, stir and remove from the heat.
- In a saucepan add in the spread and gently melt. Stir in the flour until fully combined. Little by little add in the milk while whisking, season with salt and pepper. When all the milk is added and the sauce is smooth remove from the heat and add in the grated cheese.
- Spray an ovenproof dish with the remaining oil and place a layer of potatoes and then top with the lentil mixture. Top the lentils with half the aubergine slices, and then top with the cheese sauce. Top the cheese sauce with the other half of the aubergine slices, season again and bake in the oven for 30-40 minutes.
*allow to sit for at least 5 minutes when it's removed from the oven.
