These brownies are delicious, gooey in the middle, rich dark chocolatey and fully vegan... but you won't be able to tell.

  • 200g dark chocolate
  • 170g self raising flour
  • 6g cocoa powder
  • 180g caster sugar
  • 1g sea salt
  • 75ml sunflower oil
  • 230ml soya milk
  • ½ tsp vanilla essence


  1. Preheat the oven to 180C.
  2. Melt 150g of the dark chocolate and then set aside to cool slightly.
  3. Meanwhile sieve the flour and cocoa powder into a bowl, stir in the sugar and a pinch of salt.
  4. Stir in the oil, soya milk, melted chocolate and vanilla essence until combined.
  5. Roughly chop the remaining chocolate and stir in.
  6. Pour the mixture into a greased, lined baking tin, bake in the oven for 20-25 minutes until cooked on the outside and still a little gooey in the middle. Leave to cool for 5 minutes before turning out onto a wire cooling rack.
  7. Cut into 12 equal servings.
