Vegan Brownies

These brownies are delicious, gooey in the middle, rich dark chocolatey and fully vegan... but you won't be able to tell.
Suitable for Vegans.

Ingredients
- 200g dark chocolate
- 170g self raising flour
- 6g cocoa powder
- 180g caster sugar
- 1g sea salt
- 75ml sunflower oil
- 230ml soya milk
- ½ tsp vanilla essence
Method
- Preheat the oven to 180C.
- Melt 150g of the dark chocolate and then set aside to cool slightly.
- Meanwhile sieve the flour and cocoa powder into a bowl, stir in the sugar and a pinch of salt.
- Stir in the oil, soya milk, melted chocolate and vanilla essence until combined.
- Roughly chop the remaining chocolate and stir in.
- Pour the mixture into a greased, lined baking tin, bake in the oven for 20-25 minutes until cooked on the outside and still a little gooey in the middle. Leave to cool for 5 minutes before turning out onto a wire cooling rack.
- Cut into 12 equal servings.
