Vegan Blueberry Pancakes

Who says you can't have pancakes on a vegan diet? These are just as good as egg pancakes if you ask me.

Ingredients
- 55g self raising flour
- 10g caster sugar
- 1 pinch salt
- 100ml almond milk
- 1 tsp vegetable oil
- 10 sprays sunflower oil
- 40g blueberries, raw
- 1 tbsp maple syrup
- ½ tsp icing sugar
Method
- Sieve together the flour, sugar and salt. Whisk in the almond milk and vegetable oil and mix until fully combined.
- Heat a non stick pan to medium heat and spray with oil, spoon in one third of the mixture per pancake and cook until bubbles rise through to the top and pancakes are golden around edges. Flip and cook on the other side.
- If pan is big enough do all 3 at one time,
- Top with blueberries, a drizzle of maple syrup and icing sugar.
