Tofu Scramble

Tofu scramble is a staple vegan breakfast on the weekends. You can flavour it any way you like and its a great way to start your day!

Suitable for Vegans.

  • 5 sprays sunflower oil
  • 75g tofu, firm
  • ¼ tsp turmeric
  • 1 slice bread
  • 1 tomato
  • 45g spinach
  • 1 pinch salt
  • 1 pinch black pepper


  1. Heat a non stick pan and spray with oil.
  2. When the pan is hot, drain and crumble the tofu into the pan, sprinkle in the turmeric and stir fry for a few minutes. Toast the bread.
  3. Meanwhile dice the tomato and roughly chop the spinach, add to the pan along with the tofu and cook until hot through.
  4. Season with salt, pepper and any herbs/spices you like.
