Tofu scramble is a staple vegan breakfast on the weekends. You can flavour it any way you like and its a great way to start your day!
Suitable for Vegans.
- 1 serving
- 10 mins
- 5 sprays sunflower oil
- 75g tofu, firm
- ¼ tsp turmeric
- 1 slice bread
- 1 tomato
- 45g spinach
- 1 pinch salt
- 1 pinch black pepper
- Heat a non stick pan and spray with oil.
- When the pan is hot, drain and crumble the tofu into the pan, sprinkle in the turmeric and stir fry for a few minutes. Toast the bread.
- Meanwhile dice the tomato and roughly chop the spinach, add to the pan along with the tofu and cook until hot through.
- Season with salt, pepper and any herbs/spices you like.
