Quinoa Fruit Salad

We know this sounds a little unorthodox, but trust us, its delicious and a great way to get some extra protein and up your daily fruit content.

Ingredients
- 70g quinoa
- 10 strawberries
- 1 kiwi
- ½ orange
- 20 blueberries
- 40g pomegranate seeds
- 10 mint leaves
- 100ml orange juice
- 20ml lime juice
- 2 tsp honey
Method
- Prepare the quinoa according to the instructions, when cooked place in the fridge to cool completely.
- Slice the strawberries, kiwi and orange and layer in two jars with the quinoa and the rest of the fruit and mint, place in the fridge while making the dressing.
- Mix orange juice, lime juice and honey in a bowl until the honey is mixed in. Drizzle onto fruit salad before eating.
*To make this vegan just swap the honey for a syrup of your choice
