- 50g beetroot, pickled
- 30g cream cheese
- 2 slices wholemeal bread
- ½ avocado
- 10g rocket, fresh
- Slice the pickled beetroot and mix into the cream cheese. Spread onto a slice of bread, top with sliced avocado and rocket.
To make this vegan use your favourite dairy free soft cheese instead!
