Try something a little different with this recipe. The best part is you can top it with whatever you like, we chose sprouts and chilli flakes for some extra texture and flavour.

Suitable for Vegetarians.

Ingredients

  • ½ avocado
  • 1 egg
  • 1 spring onion
  • 1 tsp chilli flakes
  • 10g alfalfa sprouts
  • 1 pinch salt
  • 1 pinch black pepper

Method

  1. Preheat the oven to 220C.
  2. Cut the avocado open, scoop out the stone and a little of the flesh*
  3. Crack the egg into the avocado and season with salt and pepper. Bake in the oven until the egg is set and fully cooked through.
  4. Finely slice the spring onion and sprinkle on top with a small pinch chilli flakes and the sprouts.


*Depending on the size of the avocado stone you may or may not have to scoop some flesh out to get a whole egg into the avocado.
