Oat Muffins Recipe

For a quick and easy, low fat, low calorie snack bake up these oat muffins! This recipe makes six, so you could treat yourself to one a day if you have the calories of course!

Ingredients

  • 15g Sugar, Granulated, Silver Spoon
  • 125g breakfast Cereal, Oatbran, Original Pure, Mornflake
  • 30g Raisins, Seedless, Average
  • 150g Blueberries, Raw, Average
  • 2 Tsps/6g Cinnamon, Ground, Average
  • 2 Tsps/4g Baking Powder, Average
  • 175g Apples, Dessert, Organic, Tesco
  • 1 Tbsp/6g Lemon, Peel, Raw, Average
  • 1 fl oz/30ml Water, Mineral Or Tap
  • 175ml Milk, Skimmed, Average
  • 1 Lg Egg/33g Eggs, Whites Only, Raw, Average

Method

Preheat the oven to 200°C (400°F, Gas Mark 6)

1. Combine sugar, oat bran, raisins and blueberries, cinnamon & baking powder

2. Blend the Apple, lemon rind, water, milk & egg white

3. Stir into the oat bran mixture, leave to rise for 5-10 mins

4. Divide into muffin tray/cases, bake for 15-18 mins til brown

5. Turn onto wire rack to cool. Keep for approx. 4 days.
