Blueberry Muffins Recipe

Watching you calories definitely doesn’t mean you aren’t allowed any sweet treats from time to time! Bake up these low calories blueberry muffins and treat yourself! After all, they are only 138 calories each!

Ingredients
- 110g butter
- 65g caster sugar
- 2 medium eggs
- 110g plain flour
- 1½ tsp baking powder
- ¼ tsp ground nutmeg
- 125g blueberries

Method
Preheat oven to 200°C / Gas Mark 6 / 400°F
- Line a muffin pan with bun cases.
- Cream the butter and sugar together. Beat the eggs in a bowl then add gradually to the butter mixture, beating after each addition. Add the flour, baking powder, nutmeg, stir to combine, dont worry about any lumps, then refrigerate for at least an hour.
- Stir in the blueberries.
- Place a spoonful of muffin mixture into each muffin case, filling each to just over half way.
- Bake in the oven for 20 minutes, or until golden on top.
