Tomato & Vegetable Soup with Warmth Recipe

This soup is so easy to make you can leave it cooking while you’re getting on with daily tasks be it at home or at work! This low calorie lunch or dinner is only 103 calories per serving and full to the brim with flavor. Serve up with a lovely crisp salad or a few slices of wholemeal bread and ta dah!

Ingredients

  • 400g tinned chopped tomatoes
  • 20g sun dried tomato paste
  • 100g broccoli
  • 150g leeks
  • 3 medium carrots
  • 2 garlic cloves
  • 10g root ginger
  • 10g chicken stock cubes

Method

  1. Just chop everything small, put in pressure cooker with enough water to cover and cook for half hour.
  2. Liquidise, reheat and serve with bread of choice.
