Tomato & Basil Soup Recipe

There’s nothing better than a lovely warm soup on a winter’s day! Make up as much as you’d like to save and serve for later in the week! This low calorie dish is perfect served with a few slices of wholemeal bread and butter, if you’ve got calories spare!

Ingredients

  • 90g onion
  • 3g garlic
  • 15ml olive oil
  • 30g tomato puree
  • 130g canned chopped tomato
  • 5ml balsamic vinegar
  • 225ml water
  • 5g basil leaves

Method

  1. Roughly chop the onion and garlic.
  2. Fry the onion and garlic in a little olive oil, till the onion is tender and clear.
  3. Stir in the tomato puree and mix well with the onion. Add the tinned tomatoes, vinegar and stock/water. Simmer for 10 minutes. Cool a little, add the basil leaves, then liquidise till smooth.
  4. Re-heat and serve.
