Tomato & Basil Soup Recipe

There’s nothing better than a lovely warm soup on a winter’s day! Make up as much as you’d like to save and serve for later in the week! This low calorie dish is perfect served with a few slices of wholemeal bread and butter, if you’ve got calories spare!

Ingredients
- 90g onion
- 3g garlic
- 15ml olive oil
- 30g tomato puree
- 130g canned chopped tomato
- 5ml balsamic vinegar
- 225ml water
- 5g basil leaves
Method
- Roughly chop the onion and garlic.
- Fry the onion and garlic in a little olive oil, till the onion is tender and clear.
- Stir in the tomato puree and mix well with the onion. Add the tinned tomatoes, vinegar and stock/water. Simmer for 10 minutes. Cool a little, add the basil leaves, then liquidise till smooth.
- Re-heat and serve.
