Pepper & Carrot Soup Recipe

If you’re looking for a filling yet low calories lunch, try out this beautiful pepper and carrot soup recipe! Not only is it low calories, but it’s also very low in fat. Serve with a couple of slices of buttered bread if you have the calories spare!

Ingredients
- 1 medium onion
- 6g garlic
- 336g carrots
- 1 medium green pepper
- 1 medium red pepper
- 1 medium yellow pepper
- 200ml vegetable stock
Method
- Brown onion, then add garlic, roughly chop carrots and peppers add to pot.
- Add stock cubes and enough water to cover veg. Season to taste.
- Bring to boil then simmer for twenty mins.
- Leave to cool slightly then liquidise.
