Pepper & Carrot Soup Recipe

If you’re looking for a filling yet low calories lunch, try out this beautiful pepper and carrot soup recipe! Not only is it low calories, but it’s also very low in fat. Serve with a couple of slices of buttered bread if you have the calories spare!

Ingredients

  • 1 medium onion
  • 6g garlic
  • 336g carrots
  • 1 medium green pepper
  • 1 medium red pepper
  • 1 medium yellow pepper
  • 200ml vegetable stock

Method

  • Brown onion, then add garlic, roughly chop carrots and peppers add to pot.
  • Add stock cubes and enough water to cover veg. Season to taste.
  • Bring to boil then simmer for twenty mins.
  • Leave to cool slightly then liquidise.
