French Onion Soup Recipe

This French onion soup is packed full of flavor and can be made using vegetable stock if you’re vegetarian/vegan, and it’s super low calorie! The key to this dish is time! So, if you have an hour or two spare, give this recipe a go and make enough to freeze and reuse throughout the week.

Ingredients
- 500g onion
- 150g leek
- 9g garlic
- 1 tsp olive oil
- 9.5g beef stock cube

Method
- Finely chop the onion, leek and garlic.
- Heat the oil in the pan and fry slowly and gently on a low heat for 50 minutes. Stir occasionally just to make sure nothing sticks. Do take the full time and do it slow and low. You don't want to colour the onion much, just gently cooking through like this sweetens the flavour.
- After the 50 minutes, add the stock (vegetable stock can be used instead) and simmer gently for 15 mins.
