Broccoli & Courgette Soup Recipe
This hearty low calorie soup packs a punch with half of your 5 a day recommendation. Wonderful for either a lunch or dinner on a cold autumn day (or any other time of the year!).

- 150g courgette
- 150g broccoli
- 90g onion
- 3g garlic
- ½ tbsp olive oil
- 225ml water
- 40g parmesan

- Roughly chop the courgettes, broccoli, onion and garlic.
- Gently fry the chopped onion in a saucepan with the oil and garlic until the onion softens.
- Add stock made up with the water, broccoli, courgettes. Heat till boiling, then turn down the heat and simmer for 10 minutes or until the vegetables are tender, but not at all mushy.
- Take off the heat and add the grated parmesan and season to taste. Cool a bit then put in the blender until smooth and creamy. Return to the pan to heat. Add a bit more stock if necessary.
You could microwave the broccoli and courgettes to cut down the cooking time.
