Parsnip Hash Browns Recipe

Hash browns are one of the best parts of a big breakfast, and now you can make this parsnip twist on a classic. Low in calories and quick to make you can enjoy these any time of day.

Ingredients

  • 250g parsnip
  • 300g charlotte potatoes
  • 1 garlic clove
  • 100g onion
  • 1 medium egg
  • 2 tbsp sunflower oil

Method

  1. Wash and peel the parsnips and potatoes, coarsely grate. Squeeze out as much of the liquid as possible and put them in a bowl.
  2. Finely chop the garlic and onion, beat the egg and add these to the bowl.
  3. Mix together and season to taste. Divide into four flat cakes.
  4. Heat the oil in a non-stick frying pan and fry the cakes over a low heat for around 5 minutes on each side.

Lovely served with a poached egg. To reduce the calorie and fat content further you could use an oil spray to coat the pan.
