Parsnip Hash Browns Recipe
Hash browns are one of the best parts of a big breakfast, and now you can make this parsnip twist on a classic. Low in calories and quick to make you can enjoy these any time of day.

- 250g parsnip
- 300g charlotte potatoes
- 1 garlic clove
- 100g onion
- 1 medium egg
- 2 tbsp sunflower oil

- Wash and peel the parsnips and potatoes, coarsely grate. Squeeze out as much of the liquid as possible and put them in a bowl.
- Finely chop the garlic and onion, beat the egg and add these to the bowl.
- Mix together and season to taste. Divide into four flat cakes.
- Heat the oil in a non-stick frying pan and fry the cakes over a low heat for around 5 minutes on each side.
Lovely served with a poached egg. To reduce the calorie and fat content further you could use an oil spray to coat the pan.
