Greek Feta Pitta Recipe

This twist on traditional Greek salad is quick and easy to make and its low calorie! These are great for picnics or for taking to work, & feel free to swap out any ingredients you don’t like.

Ingredients
- 15g cucumber
- 10g spring onions
- 100g romaine lettuce
- 50g cherry tomatoes
- 30g feta cheese
- 1 tsp olive oil
- 1 tsp balsamic vinegar
- 1g black pepper
- 1 white pitta bread

Method
- Prepare and finely chop the cucumber and spring onions. Shred the lettuce and slice the cherry tomatoes into quarters.
- Dice the feta into small cubes.
- Combine the olive oil, balsamic vinegar and a pinch of black pepper to make a dressing. Put the lettuce, spring onion, cucumber and tomatoes in a bowl, drizzle over the dressing and toss to evenly distribute.
- Split the pitta bread and arrange the dressed salad inside. Sprinkle in the feta pieces and serve.
