Greek Feta Pitta Recipe

This twist on traditional Greek salad is quick and easy to make and its low calorie! These are great for picnics or for taking to work, & feel free to swap out any ingredients you don’t like.

Ingredients

  • 15g cucumber
  • 10g spring onions
  • 100g romaine lettuce
  • 50g cherry tomatoes
  • 30g feta cheese
  • 1 tsp olive oil
  • 1 tsp balsamic vinegar
  • 1g black pepper
  • 1 white pitta bread

Method

  1. Prepare and finely chop the cucumber and spring onions. Shred the lettuce and slice the cherry tomatoes into quarters.
  2. Dice the feta into small cubes.
  3. Combine the olive oil, balsamic vinegar and a pinch of black pepper to make a dressing. Put the lettuce, spring onion, cucumber and tomatoes in a bowl, drizzle over the dressing and toss to evenly distribute.
  4. Split the pitta bread and arrange the dressed salad inside. Sprinkle in the feta pieces and serve.
