BLT Toastie Recipe

This is a twist on the traditional BLT and definitely worth making- whether it’s for a lunch or a quick dinner. Preparation and cooking time is just 10 minutes, certainly a quick and easy meal! It’s got almost 2 portions of Fruit and Vegetables and a good provider of protein.

- 85g tomatoes
- 56g lean back bacon
- 2 thin sliced wholemeal bread
- 2 tsp mayonnaise
- 56g iceberg lettuce

- Turn the grill on to a medium heat.
- Slice the tomatoes.
- Grill the bacon.
- Toast the bread and spread 1 tsp mayonnaise on each slice.
- Arrange the bacon, lettuce and tomato on one slice of bread, season to taste and top with the remaining slice. Enjoy!
