Ingredients

  • 120g salmon fillet
  • 90g baby spinach
  • 1 tsp extra virgin olive oil
  • 1 tsp lemon juice
  • 4 cherry tomatoes
  • ¼ red onion

Method

  1. Make a salad with the spinach, chopped tomatoes and sliced red onion.
  2. Combine the lemon juice and olive oil and a small pinch each of salt and pepper to make a dressing.
  3. Place the salmon (you can serve it hot or cold) on the salad and drizzle over the dressing.
