Peach, Stilton and Walnut Salad

If you like blue cheese, you'll love this salad. It combines sweet, ripe peaches with creamy Stilton and crunchy walnuts on a bed of rocket and onion... Drizzled with low calorie Balsamic dressing - it's simply divine (... and under 350 calories!)

- 30g Stilton blue cheese
- ¼ red onion
- 1 peach
- 80g rocket
- 6 walnut halves
- 1 tsp low fat balsamic dressing
- Slice the peach and red onion, then combine with the rocket leaves.
- Cube the Stilton cheese and scatter over the salad, along with the walnut halves.
- Drizzle with balsamic dressing and enjoy!
