Leek Salad Recipe
These low calorie simple marinated leeks are a great side to pair with that chicken you don’t know what to do with. They’re low in carbs to and really easy to make.

- 350g baby leeks
- 28g fresh mint
- 25ml olive oil
- 1 tbsp white wine vinegar

- Trim and wash the leeks before blanching in boiling water for 1-2 minutes until tender. Drain and refresh under cold water.
- Mix the chopped mint, oil and white wine vinegar together in a small bowl and pour over the baby leeks. Adding salt and freshly ground pepper to taste.
- Allow to marinate for 5 minutes before serving.
