Greek Salad Recipe
Greek salad is a great low carb meal to have for your lunch or even for a light dinner. Add any extras you like, just make sure to add them onto your food diary.

- 80g cucumber
- 615g tomatoes
- 180g red onion
- 112g feta cheese
- 15 black pitted olives
- 15ml olive oil
- 17.75ml fresh lemon juice
- 1 tbsp fresh parsley
- Cut the cucumber into chunks.
- Slice the tomato and red onion.
- Cube the feta cheese and halve the olives.
- Mix together the oil and lemon juice for the dressing
- Drizzle over the salad.
- Top with parsley.
