Bean Sprout Salad Recipe

Ingredients

  • 125g button mushrooms
  • 28g low fat french dressing
  • 400g carrots
  • 250g red cabbage
  • 500g fresh bean sprouts
  • 800g canned mung bean sprouts
  • 120g mustard cress

Method

  1. Wipe and thinly slice the mushrooms and place into a large salad bowl.
  2. Pour over the french dressing and toss lightly. Leave to stand for 30 minutes.
  3. Trim and cut carrots into thin sticks, thinly shred cabbage.
  4. Add all of the remaining ingredients and toss well.
  5. Serve immediately.
