Omelette Nicoise Recipe

This French spin on a traditional omelette, is low in calories, and comes together quickly and easily. A staple for any weekend breakfast, feel free to change the veg to whatever you have on hand.

- 6 large eggs
- 1 tsp olive oil
- 1 small aubergine
- 25g courgette
- 1 medium red pepper
- Whisk the eggs.
- Put a little olive oil and 1 tablespoon of water in a pan with a lid and heat.
- Chop the aubergine, courgette and red pepper and cook them in the covered pan.
- Add to eggs and cook in an omelette.
