Omelette Nicoise Recipe

This French spin on a traditional omelette, is low in calories, and comes together quickly and easily. A staple for any weekend breakfast, feel free to change the veg to whatever you have on hand.

Ingredients

  • 6 large eggs
  • 1 tsp olive oil
  • 1 small aubergine
  • 25g courgette
  • 1 medium red pepper

Method

  1. Whisk the eggs.
  2. Put a little olive oil and 1 tablespoon of water in a pan with a lid and heat.
  3. Chop the aubergine, courgette and red pepper and cook them in the covered pan.
  4. Add to eggs and cook in an omelette.
