Pork Balls with Tomato Sauce Recipe

Make your own meatballs with this recipe; cooked in a rich tomato-ey sauce these meatballs are packed with flavour and delicious. Serve with pasta or rice.

Ingredients

  • ½ Med/90g Onions, Raw, Average
  • 3g Garlic, Raw, Average
  • 400g Tomatoes, Chopped, Canned, Branded Average
  • 30g Tomato Puree, Average
  • 30g Thyme, Fresh, Average
  • 320g Pork, Mince, Lean, Healthy Range, Average
  • 20g Flour, Plain, Average
  • 2 Tbsps/30ml Cream, Single, Elmlea
  • 2g Pepper, Black, Freshly Ground, Average
  • 2 Tsps/10ml Oil, Sunflower, Average

Method

Preheat oven to 190C/375F/gas mark 5

Very finely chop half the onion and finely chop the other half. Finely chop the thyme and crush the garlic.

Put the very finely chopped onion into a large bowl add the pork mince and thyme and mix well to combine. Shape into balls (3-4cm high) and lightly dust with the flour.

Place the pork balls onto a lightly greased baking tray and bake in the oven for 20-25 minutes until cooked through.

In the meantime, heat the oil in a pan, add the remaining onion and gently stir-fry for 3-4 minutes.

Add the garlic and continue to fry for a further minute.

Stir in the tomatoes, tomato puree and cream, and simmer gently until meatballs are cooked.

When the meatballs are done, add them to the sauce and continue to simmer for a further 5 minutes.

Serve with rice or pasta.
