Spinach & Quorn Bacon Gnocchi Recipe

This vegetarian pasta dish is quick and easy to make, and sure to keep you fuller for longer. With less than 400 calories this well rounded dinner keeps you and your calorie counter happy.

Ingredients

  • 10ml olive oil
  • 50g Quorn bacon
  • 1 clove garlic
  • 120g fresh gnocchi
  • 50g baby leaf spinach
  • 45g quark cheese
  • 1 tsp ground nutmeg

Method

  1. Heat oil and cook Quorn bacon and garlic. While it's cooking, cook the gnocchi according to the instructions.
  2. Remove the bacon and garlic from the heat and stir in spinach until it wilts.
  3. Return to a low heat, add quark and gnocchi and stir.
  4. Transfer to a plate, sprinkle on the nutmeg (and some walnut if you can spare the calories).
  5. Eat!

This makes one generous serving.
