One Pot Chickpea Tomato Linguine (vegan / vegetarian)

- 70g dry linguine
- 200g passata
- 100ml water
- 1 red chilli pepper
- ½ can chickpeas, drained
- 1 tbsp capers
- 5 basil leaves

- Lay the linguine flat on the bottom of a saucepan, snapping if necessary. Cover with Passata and then add the water.
- Bring to the boil, then reduce to a simmer, make sure to keep stirring it to ensure the pasta doesn’t stick to the bottom.
- Slice the chilli & sun-dried tomatoes, drain the capers and chickpeas and add all these ingredients to the pan, stir well and cover with lid and cook until the pasta is fully cooked. (roughly 10 minutes)
- Chop the basil and add this just before serving, stirring it through with some black pepper.
