Toad In the Hole with Veg and Gravy

This lower calorie twist on a true British classic is guaranteed to satisfy that comfort food craving.

- 70g plain flour
- ¼ tsp salt
- 1 medium egg
- 125ml skimmed milk
- 20 sprays oil
- 4 large reduced fat sausages (228g)
- 4 carrots
- 180g curly kale
- 2 servings gravy from granules (100ml)
Preheat oven to 220°C / Gas Mark 7 / 425°F
Put the flour into large bowl with the salt, beat in the egg. Gradually beat in the milk to make a smooth batter. Set aside.
Spray a small roasting pan with oil, add the sausages. Bake for 15 mins.
Slice the carrots and chop the curly kale.
Remove the sausages from oven, pour the batter over, return to oven and bake for a further 30-35 mins. (Do not open oven door during this time)
Meanwhile the boil carrots and kale.
Make the gravy just before serving.
