Spinach & Goats Cheese Salad with Oatcakes Recipe

This quick and easy, low carb salad makes a great lunch or light dinner, sprinkled with sunflower and pumpkin seeds and served with oatcakes.

- 200g baby spinach
- 150g feta cheese
- 30g seed mix
- 1 tbsp olive oil
- 5ml fresh lemon juice
- ½ tsp smooth mustard
- 2g ground black pepper
- 4 oatcakes
- Put the leaves, seeds and cheese in a bowl.
- Put the dressing ingredients in a mug and whisk with a fork till combined.
- Tip onto the salad ingredients and mix well. Serve with the oatcakes.
