Spinach & Goats Cheese Salad with Oatcakes Recipe

This quick and easy, low carb salad makes a great lunch or light dinner, sprinkled with sunflower and pumpkin seeds and served with oatcakes.

  • 200g baby spinach
  • 150g feta cheese
  • 30g seed mix
  • 1 tbsp olive oil
  • 5ml fresh lemon juice
  • ½ tsp smooth mustard
  • 2g ground black pepper
  • 4 oatcakes


  1. Put the leaves, seeds and cheese in a bowl.
  2. Put the dressing ingredients in a mug and whisk with a fork till combined.
  3. Tip onto the salad ingredients and mix well. Serve with the oatcakes.
