Chickpea & Walnut Salad Recipe
For a healthy hearty lunch, try this chickpea and walnut salad recipe packed with fiber and almost 3 of your 5 a day. Prepared in only 15 minutes you can chuck everything together if you’re in a rush and make the perfect meal to take into work!

- 112g whole green beans
- 75g carrots
- 1 medium stalk celery
- 90g red onion
- 112g walnuts
- ½ can chickpeas
- 3 tbsp garlic mayonnaise
- Top and tail the green beans and steam them for 3-5 minutes.
- Dice the carrot, celery and red onion. Roughly break up the walnuts.
- Put the chickpeas in a salad bowl and mix them with the mayonnaise and yoghurt.
- Stir in the chopped carrot, celery and red onion, green beans and the walnuts.
- Season to taste.
