Chickpea & Walnut Salad Recipe

For a healthy hearty lunch, try this chickpea and walnut salad recipe packed with fiber and almost 3 of your 5 a day. Prepared in only 15 minutes you can chuck everything together if you’re in a rush and make the perfect meal to take into work!

Ingredients

  • 112g whole green beans
  • 75g carrots
  • 1 medium stalk celery
  • 90g red onion
  • 112g walnuts
  • ½ can chickpeas
  • 3 tbsp garlic mayonnaise

Method

  1. Top and tail the green beans and steam them for 3-5 minutes.
  2. Dice the carrot, celery and red onion. Roughly break up the walnuts.
  3. Put the chickpeas in a salad bowl and mix them with the mayonnaise and yoghurt.
  4. Stir in the chopped carrot, celery and red onion, green beans and the walnuts.
  5. Season to taste.
