Lamb Stew Recipe

A delicious lamb stew that is low in calories and packed full of protein. This dish just cooks away while you sit back and relax. Serve with some fresh peas or corn.

Ingredients
- 300g diced lamb
- 100g leeks
- 227g carrots
- 300g potatoes
- 1 cube beef stock
- 15g dry gravy granules
Method
Preheat oven to 200°C / Gas Mark 6 / 400°F
- Dice the lamb and throw it in the casserole dish.
- Peel, slice, chop all the veg and throw them in too.
- Add the stock and enough water to just barely cover. Stir to mix it all well. Cook for 2 hours.
- OR if you have a slow cooker, put it all in there and cook on low for 8 to 12 hours.
You can double, or triple this recipe to make a big batch then freeze and store for later use.
