Stir Fried Egg Noodles with Smoked Salmon & Tiger Prawns Recipe

If you’re looking for a new inventive recipe look no further! This quick and easy smoked salmon and tiger prawn stir fry is the perfect meal to try if you want something a little different. Full of loads of ingredients this meal speaks for its self and doesn’t need to be served with anything else!

Ingredients

  • 80g broccoli
  • 16g spring onions
  • 1 garlic clove
  • 1 tsp ginger
  • 13g red chilli pepper
  • 168g smoked salmon
  • 227g tiger prawns
  • 224g egg noodles
  • 2 tbsp olive oil
  • 1 tbsp sesame oil
  • 5g lemon grass
  • 30ml lime juice
  • 114g spinach
  • 80g cherry tomatoes

Method

  1. Break the broccoli into florets, slice the spring onions, chop the garlic, ginger and peppers, and tear the smoked salmon into pieces.
  2. Place the tiger prawns under a hot grill and grill until pink (about 1-2 minutes on each side). Bring a pan of water to the boil, add the egg noodles and cook for 2 minutes. Drain and set aside.
  3. Heat the oils in a wok. Add the chilli, garlic, broccoli, ginger and lemon grass. Stir-fry for a few minutes then add the lime juice, spinach, spring onions, cherry tomatoes and smoked salmon and stir-fry for another minute or two.
  4. Finally add the noodles and prawns and toss them around in the hot pan for a couple of minutes more.
