Poached Salmon with Leeks Recipe

Packing a real punch of protein and healthy fats, this low calorie Salmon recipe is super quick and easy to make. It’s also low carb and at only 244 calories is a mouth-watering midweek dinner that you’ll keep coming back to.

  • 60g leeks
  • 250g salmon steaks
  • 115g fresh lemon
  • 90ml made up fish stock


  1. Clean the leeks and chop them into lengthways strips.
  2. Arrange the leeks to cover the bottom of a sauté pan.
  3. Place the salmon steaks on top. Squeeze over the juice of the lemon and then pour over the fish stock. Bring the liquid to a boil and simmer gently until the fish is cooked through.

Serve with a big rainbow of vegetables.
