Poached Salmon with Leeks Recipe

Packing a real punch of protein and healthy fats, this low calorie Salmon recipe is super quick and easy to make. It’s also low carb and at only 244 calories is a mouth-watering midweek dinner that you’ll keep coming back to.

- 60g leeks
- 250g salmon steaks
- 115g fresh lemon
- 90ml made up fish stock
- Clean the leeks and chop them into lengthways strips.
- Arrange the leeks to cover the bottom of a sauté pan.
- Place the salmon steaks on top. Squeeze over the juice of the lemon and then pour over the fish stock. Bring the liquid to a boil and simmer gently until the fish is cooked through.
Serve with a big rainbow of vegetables.
