Easy Cook Salmon with Minted Vegetables Recipe

Ingredients

  • 750g new potatoes
  • 350g frozen peas
  • 350g frozen sliced green beans
  • 3 tbsp olive oil
  • 1 lemon
  • 20g fresh mint
  • 4 small salmon fillets

Method

  1. Boil the potatoes in a large pan for 4 mins.
  2. Add in the peas and beans, bring back up to the boil, then continue cooking for another 3 mins until the potatoes and beans are tender.
  3. Process the olive oil, lemon zest and juice and mint in a blender to make a dressing.
  4. Put the salmon in a microwave-proof dish, season, then pour the dressing over.
  5. Cover with microwave cling film, pierce, then microwave on high for 4-5 mins until cooked through.
  6. Alternatively, bake in a preheated oven (180°C, 350°F, Gas Mark 4 for 25 - 30 minutes). Drain the veg, then mix with the hot dressing and cooking juices from the fish.
  7. Serve the fish on top of the vegetables.
